After years of traveling to Baja California and enjoying fish tacos at beachside stands, Ralph Rubio opened his first restaurant in San Diego in 1983, banking on the south-of-the-border favorite. Today, Rubio's are located throughout the Southwest serving tacos, burritos salads and more. Baja-style fish tacos are the specialty--beer-battered Alaskan Pollack, cabbage and salsa in a soft corn tortilla. Street tacos (carnitas, carne asada, chicken), quesadillas, nachos and taquitos are other popular options.

Fiesta!.
Coming from the east coast, I was thrilled to discover Rubio's Baja Grill. The food is great, the prices are great, and they even have vegetarian options! It's a nice compromise when you don't want fast food but don't want to sit down for a long restaurant meal either.
