Great Mexican Food. This place is such a find...great, simple Mexican fare...I usually grab a dozen tamales when I'm in the area to take home with me, after enjoying a great lunch.

Nice tortillas and beans......... I read these other reviews and went to this place expecting to really be knocked off my feet. While it is true that the place is frequented by firefighters, police , EMTs, etc., it did not match my experiences with many great and dirty dives I frequent when in Palm Springs/San Diego. I found the tortillas and beans to be very good, but the cheese enchiladas were only so-so, lacking cheese and sporting too much sauce. The machaca burrito was "soupy" and not the match of the Arizona Donut Shop in Yuma, and the tostada pretty was much only beans and tortilla shell with hardly any lettuce greens on top. All in all, OK, but not up to these other reviews.

Beyond the primitive decor, customers quickly discover discover what so many people have known for years: This is homey, hearty, cheap food. Mobs of downtown working stiffs and other in-the-know Valley residents fill the place on a regular basis. You can go for takeout or stay in for tacos, enchiladas, burritos, flautas--all the usual stuff.

Hands Down the BEST MEXICAN FOOD in Phoenix!. This is by far the best authentic Mexican food ever! I have been going to Carolina's since the early 80's and have to say that I have never had better tasting Mexican food anywhere else. The food is reasonable, the service is quick, and everything is fresh. I absolutely recommend the Machaca Burrito ask for extra cheese, oh and don't forget a buttered tortilla. You cannot leave this place without buying a dozen tortillas. Although it looks scary, don't worry there are always cops eating there. This is the valley's best kept secret!

Best In Arizona?. Carolina's could very possibly be the best value for your buck in the entire state. But just because the food is cheap does not mean it tastes cheap. This is delicious, authentically prepared top notch Mexican. Carolina's serves up food tasting better and fresher than places that charge 4 or 5 times as much.

If you don't mind no frills and if the food is what is most important to you, then Carolina's is a must visit.

old school. If you like old school Mex food without the cheezy menus, prefab margaritas, and goofy service in stupid uniforms, this is the place for you! Yes, this place looks like a dive, but home made tortillas wrapped around fresh ingredients and scratch sauces make the food delicious, and cheap! Order at the counter, then sit down and enjoy - uncleBad recommends the burros.

Awesome!. I've been eating here for 5 years and I love it! The best tacos and chimichangas around. The homemade salsa is a huge plus.

If you go during lunch on weekdays, you're bound to see a line, but it moves fast...not to mention all the firefighters and military guys that are eating...that alone is worth a visit.

They have posole on Sundays only, and it goes FAST!

Munch A Bunch Of Muy Bueno Eats!. Carolina's serves delicious, freshly prepared and authentic Mexican food world's better than the usual chain variety. Highly recommended are the giagantic breakfast burros (burritos), the shredded beef or chicken chimichangas, the flautas, tacos, green chili verde, carne asada or carnitas. The chorizo is freshly made and amazingly greaseless.

Take out is best in this working class Hispanic neighborhood, and I felt safe enough stopping by with a friend. Avoid peak lunch time (noon to 1 pm) to minimize lines, although lines move along quickly. A must stop on any trip to Phoenix.

MMMM MMMM GOOD!!. Carolinas has the best mexican food I have had since I moved here. I'm picky about my food, and dislike certain things- and they are so good about getting my order right! Not only do they have great fast service... but their food is to die for!! Thank goodness I only work around the corner, but I would definitely drive across town for a great lunch here! And they are open early! I start work at 5am (unfortunately) and my lunch is scheduled for 8:30am- and they are open!! =)

Spicy delight!. One of the cheapest, tastiest lunches around! Carolina's has great chips and salsa, not to mention the best chicken enchilada ever. You can easily eat a hearty size lunch for around $3.
